"Spiced Tofu Scramble"

SAUCE INGREDIENTS
  1. ½ tsp salt
  2. ½ tsp garlic powder
  3. ½ tsp ground cumin
  4. ¼ tsp chili powder
  5. ¼ tsp turmeric
  6. Water to thin
SAUCE DIRECTIONS
  1. Mix the dry ingredients. Add enough water to make a thin paste and set aside.

SCRAMBLE INGREDIENTS
  1. 8 oz firm or extra firm tofu
  2. ¼ c thinly sliced red onion
  3. ½ c sliced red bell pepper
  4. 2 c chopped kale
  5. 2 Tbsp olive oil, divided
  6. Mixed greens
  7. Avocado slices
  8. Egg, optional
SCRAMBLE DIRECTIONS
  1. Place the tofu on a plate, then top with a clean tea towel or paper towel. Put another plate on top and place a heavy skillet on top of the upper plate. As the water is squeezed out of the tofu, drain it.
  2. While the tofu presses, heat up 1 T olive oil and sauté the vegetables with salt and pepper. Cook until just tender and set side.
  3. Remove the tofu from the press and cube it.
  4. In the same skillet for the veg, sauté the tofu in 1 T olive oil until browned.
  5. Add vegetables to the tofu, add the spiced sauce, and gently toss. Season with salt and pepper.
  6. Serve on a bed of greens with avocado slices. Top with an egg if desired.
