"Cheese Cake Tarts"

Many years ago at a family reunion at firemans park in Eden Aunt Katherine brought these cheese cake tarts and shared the recipe


INGREDIENTS
  1. 1 box vanilla wafer cookies
  2. 2 8oz packages cream cheese; softened
  3. 1/2 cup sugar
  4. 3 eggs
  5. 1 tsp vanilla
  6. 1 pint soup cream
  7. 1/4 cup sugar
  8. 1 tsp vanilla (for filling)
  9. canned cherry pudding and pie filling
DIRECTIONS
  1. Heat oven to 350 degrees.
  2. In a miniature muffin tin, place cups and a vanilla wafer in the bottom of each.
  3. Cream cream cheese and sugar, then add eggs one at a time. Add 1 tsp vanilla.
  4. Bake for 15-20 minutes and cool for another 15 minutes.
  5. For the topping, cream 1 pint sour cream, sugar, and vanilla and add to the top of each cup.
  6. Bake an additional 5-10 minutes, let cool, then refrigerate. Optionally, add a cherry to each muffin after cooling.
