"Cheese Cake Tarts"

Many years ago at a family reunion at firemans park in Eden Aunt Katherine brought these cheese cake tarts and shared the recipe
INGREDIENTS
- 1 box vanilla wafer cookies
- 2 8oz packages cream cheese; softened
- 1/2 cup sugar
- 3 eggs
- 1 tsp vanilla
- 1 pint soup cream
- 1/4 cup sugar
- 1 tsp vanilla (for filling)
- canned cherry pudding and pie filling
DIRECTIONS
- Heat oven to 350 degrees.
- In a miniature muffin tin, place cups and a vanilla wafer in the bottom of each.
- Cream cream cheese and sugar, then add eggs one at a time. Add 1 tsp vanilla.
- Bake for 15-20 minutes and cool for another 15 minutes.
- For the topping, cream 1 pint sour cream, sugar, and vanilla and add to the top of each cup.
- Bake an additional 5-10 minutes, let cool, then refrigerate. Optionally, add a cherry to each muffin after cooling.
