When my children were little we had a neighbor, Maggie. Her Nana would come over and make this once a year. It was an old family recipe. Mine never were quite as good as Nana's but we still enjoyed them. I added a little vinegar sometimes to the dumpling/bacon fry.
INGREDIENTS
- 1/4 lb bacon
- 1 Medium Onion; Chopped
- 1/2 head green cabbage; sliced
- 4-5 medium potatoes; grated
- flour
- salt & pepper
DIRECTIONS
- Dice the bacon, fry, and set aside reserving the fat.
- Saute chopped onion in bacon fat.
- Steam cabbage with salt and pepper and mi with onions
- For the dumplings add flour and salt to grated potatoes until pasty.
- Drop by teaspoon into boiling salted water and cook for 10 - 15 minutes.
- Dice 1/4 pound bacon and fry with cooked dumplings. Serve with cabbage/onion mixture.
